INGREDIENTS:
- 1/2 cup light olive oil
- 2 teaspoons vanilla extract
- 3/4 cup cane sugar
- 1/2 cup brown sugar
- 3 large eggs, room temp.
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened Dutch cocoa powder
- 1/2 cup dark chocolate chips
METHOD:
- Preheat the oven to 350°F.
- Line a 9 inch square baking pan with parchment paper and set aside.
- In a medium bowl, mix together the olive oil, brown sugar, cane sugar, and vanilla extract.
- In another bowl, whisk the eggs slightly with a fork and then add that to the olive oil mixture.
- Add the flour, cocoa powder, and chocolate chips. Mix gently to combine.
- Pour the batter into the parchment lined pan.
- Bake for 28-32 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs. Allow to cool fully in the pan before removing and cutting into squares.
